Baked Salmon

1 side of salmon (spring salmon suggested)

1 Tbsp Backcountry Barbecue

1 lemon

3 Tbsp avocado oil

Directions

Preheat oven to 400F.

Cut salmon into fillets, approximately 6oz each.

Place the fillets on a non-stick baking tray or parchment paper. Place the fillets on a non-stick baking tray or parchment paper. Lightly coat the tops with avocado oil, then sprinkle BBQ blend on just the tops of the fillets. Squeeze 1/2 lemon over the fillets, and feel free to leave the lemon amongst the fillets while baking. Squeeze 1/2 lemon over the fillets, and feel free to leave the lemon amongst the fillets while baking.

Bake salmon for approximately 10 -13 minutes; this may vary depending on the size of your fillets and oven. Once you see the white coming from the sides, it should be ready to pull out of the oven. If you have a thermometer, you’re looking to reach an internal temperature of 110-120F for a medium rare.

Enjoy with your favourite sides. We like it with butter poached spinach, grilled asparagus and curried rice. The rice recipe is found on the website, using our Ethical Table Curry Blend.

Enjoy!
