Sturgeon Batter

1/3 Cup '“00” Flour

100ml Champagne (depending on flour, may need to add more until smooth)

Can substitute Champagne for tonic water

Crème fraîche

1/2 Cup Crème fraîche (can substitute for sour cream)

1 Tsp Canadian Seas

.5 Tsp Lemon Zest

30g Acadian Wild Sturgeon Caviar

Sturgeon Loin

Directions

Start by slicing sturgeon loin into slices (see in reel)

Combine crème fraîche, Ethical Table Canadian Seas, lemon zest and whisk until smooth.

Heat frying oil in a pot to 350 - 375F.

Add flour into a mixing bowl, add Champagne while whisking and whisk until smooth.

Add one piece of sturgeon into the batter at a time using a fork, coating the entire piece of sturgeon, and slowly adding to frying oil to ensure it doesn’t stick to the bottom of the pot. Fry until golden brown and crispy. Set on a wire rack and rest for two minutes.

Start plating by placing fried sturgeon on a plate, add a tablespoon of crème fraîche on top and then caviar.

Enjoy with a glass of Champagne!
