Maple Espresso Burger

Burger Patties 

1 Tbsp Maple Espresso

1 lb Ground Beef ( can substitute game meats )

.5 lb Ground

Aioli 

1 Cup Mayo

1 Chipotle Pepper

1 Tsp Gochujang Paste

1/2 Small Lemon Squeezed

Caramelized onions 

2 Cups Yellow Onion

1 Tbsp Unsalted Butter

.5 Tsp Salt & Pepper

Other Ingredients 

Lettuce or Arugula

Sliced Tomatoes

Brioche Bun

Combine elk and boar, add maple espresso blend and incorporate well; place goat cheese in meat and form burger patties. (see in Reel) then rest in the fridge for at least one hour.

Add two cups of slice onions to one tablespoon of butter to a saucepan, salt and pepper, starting with medium-high heat, until the onions colour, then simmer until they are dark brown and caramelized, stirring every ten minutes or as needed—only a few times to allow them to caramelize.

Add mayo, chipotle, gochujang and lemon juice and blend well with hand or high-speed blender.

Slice Tomatoes, add butter to buns, and lightly sear.

Heat a frying pan, or BBQ, searing both sides of the burger and if using a frying pan, place it in 400F oven until the centre reaches a temperature of 160F

Lastly, place aioli on the bottom bun, followed by caramelized onions, burger patty, tomatoes, green and enjoy!
