Pura Vida Nachos

1.5 Tsp Pura Vida Seasoning

150g tortilla chips

75g old cheddar

1.5 Tbsp avocado oil

1/2 Cup shallot

1/2 Cup red pepper

1/2 Cup black beans

1/2 Cup corn

10 cherry tomatoes

1/4 Cup green onion

Directions

Rinse the black beans well until the water runs clear. Finely dice shallot and red pepper. Add shallot, corn, beans, and avocado oil to a medium-heated frying pan. 

Sauté vegetables until they become translucent and start to colour. 

Add Pura Vida seasoning to the frying pan and stir well; cook for approx one more minute while stirring. 

Lay out chips on a half-sheet pan, and sprinkle a small amount of Pura Vida over the chips. 

Spread shallot, beans, peppers and corn equally over the tortilla chips. 

Shred cheese and cover and you can add more to preference and taste. 

Heat oven to 425F; place sheet pan in for approximately 7 mins. You can remove it from the oven once the cheese has melted and the edges turn golden brown. 

While you wait, slice cherry tomatoes and green onion for garnish.
