Buttermilk Fried Chicken

with Ethical Table Food Co. Barbecue

(Marinated Chicken)

500 - 750 ml Buttermilk

2 lb Chicken thighs & drums

(Batter Mix)

1.5 cup “00” flour

2 Tbsp Ethical Table “Barbecue” blend

Place chicken into a medium bowl or pot, cover entirely with buttermilk, cover bowl and set in the fridge for at least 4 - 5 hours. You can leave it in overnight for the best results.

Remove the chicken from the fridge and set it on the counter for at least 30 minutes to bring it closer to room temperature.

While resting the chicken, whisk flour and Ethical Table Barbecue blend in a medium to large bowl.

With a fork, remove the chicken one piece at a time, allowing buttermilk to drip off to prevent the batter from clumping. 

Lightly toss the chicken in flour one at a time until evenly coated, then rest on a wire rack for up to twenty minutes.

Pour frying oil into pot and heat to 325F.

Slowly add a couple of pieces at a time into the frying oil, making sure they are not sticking to the bottom or overcrowding, to ensure you maintain the proper oil temperature. Blanch for approximately 5 minutes, depending on size. 

Place chicken back onto a wire rack and cool for another 20 minutes.

Now place chicken back into pot without overcrowding and fry until golden brown and crispy!

This chicken goes well with a cold glass of Champagne and coleslaw. Reel on @ethicaltable
