Using Ethical Table All Seasons Seasoning

FRENCH FRIES

4 Russet Potatoes

6 Cups Frying Oil

1 Tbsp Ethical Table All Seasons Blend

1/4 Cup Shaved Parmesan

Sriracha Aioli

1/2 Cup Mayo

1.5 Tsp Sriracha

Squeeze of Lime

Pea Greens

Wash potatoes, slice and place in hot water bath of gently boiling water for 4 mins, and set on wire rack to cool.

While the fries are cooling, mix mayo, sriracha and lime, whisk well and set in the fridge - Option to fill squeeze bottle.

Once cooled, blanch until they slightly colour and rest on a wire rack.

Final fry until golden brown and crispy.

As soon as they come out of the frying oil, toss in all seasons spice blend, coating the fries.

Plate fries, drizzle aioli, grate parmesan, garnish and ENJOY!
